Grandma Dunne's Cheese Pudding -Westmeath


8 slices of stale bread, 2 ozs butter, 5ozs grated cheddar cheese, 4 eggs, 1 cup chicken stock, 1/2 cup cream, pepper.

Remove crusts from bread, butter slices and spread cheese,( making a sandwich).

Grease an oven proof dish and arrange cheese sandwiches, cut into quarters, upright over base of dish. Beat eggs, stock and cream, pour over sandwiches making sure each is well covered, leave stand for 30 mins. Sprinkle remaining cheese on top season and bake until pudding is set ( about 130o for 20-30 minutes. My gran used to serve this as did my mum and it is still a favourite with both my children and grand children.
