Lizzie Devine's Irish Potato Cakes (Longford)


Large batch of Leftover Mashed Potatoes 
Flour
Butter

You work flour into mashed potatoes. A fair amount. You knead it in like bread dough. Then you pat it  into a circle about 1" high and cut into wedges. You slowly cook them in a frying pan with about 2 tablespoons  of butter. 15 minutes on each side over low heat. Add more butter if needed during cooking. They are done after an hour. You split them and spead each half with butter. Eat the halves like a slice of pizza - kind of folded in the middle.

These were served as a Friday dinner.
